Sweet Lemon Pickle

Sweet lemon pickle is very easy and healthy. I gave a slight twist and made a sweetish pickle. The sweet lemon pickle is not instant and also does not need much time to do. This recipe is delicious and mouth-watering. This pickle is a famous Indian condiment.

 

The sweet lemon pickle is also called as khatta meetha nimbu ka achar. This pickle is really yummy and tasty. Sweet lemon pickle is available and prepared in lots of varieties. This pickle is filled with sour, sweet and little spicy taste. It is a perfect side dish for paratha, dosa, curd rice etc.

The lemons may or may not be ripe, we can use them for this pickle. Some people are removing seeds of lemons and it will also have no issues while preparing the pickle. Lemons must be clean and wipe off all the dust and must be dry before using it. Make small pieces of lemon because big size pieces are not giving good taste for pickles. Prepare salt water and this is not rocket science. Just boiled the water with salt for a little time after dissolving the salt. In Glass jar add all lemon pieces and salt water with extra salt closed for 2 days or to a week. It totally depends upon you. While preparing the pickle the lemon pieces must be soft, by that the sweet and spicy taste will be enhanced by lemon pieces.

For sweet lemon pickle I made the combination of jaggery and dates, red chilly. Dates must be soaked before using pickles. I prefer seedless dates to take because if you are taking seed dates you have given much more time to take all the seeds from it. For preparing the pickle roast the spices like red chilly, mustard, fenugreek seeds, hing or asafetida powder and turmeric powder separately. After roasted wait till all the ingredients are cool. Grind all the spices, and dates to a smooth texture.

Prepare the tempering, add masala and jaggery. Wait to add lemon pieces until jaggery melts in masala. Finally add lemon pieces to the masala without any salt water. After adding lemon pieces further boil little time. Mouth-watering and delicious pickle is ready. For this pickle I am not added vinegar or any other preservatives. Hence we need to store it in the refrigerator after 2 days. In the refrigerator we can store 6 months in good taste.

This sweet lemon pickle recipe is very easy and delicious. This pickle is completely healthy because here not added any sugar content for sweetness.

Not added any colors, so it is completely vegan and gluten free. For working women or in our busy life this recipe is more suitable. Because once done with a recipe we can store more days and busy days we can use it.
